Sunday Morning Waffles.

One of my favorite things about weekend mornings is brunch. And since scrambled eggs or green smoothies are my normal morning go to, it's so nice to be able to sleep in and and still have time to make a meal that feels like you're treating yourself (aka pancakes or waffles). I love waffles. When I was little, we had a Mickey Mouse waffle iron, and I would fill his ears with syrup and bite his face off piece-by-piece (starting with the ears of course). There's always been something so fun about eating waffles. I think half of my love for waffles comes from the nostalgia of it all. But not eating grain or sugar means it's practically impossible to go out to brunch and get pancakes or waffles, sooo I decided to make them myself! And they came out so soft on the inside and perfectly crispy on the outside, and they made all my waffle dreams come true!!

2 eggs

1 1/2 cups almond flour

1 tbsp coconut flour  

1 tbsp baking powder  

1/4 tsp salt  

1/2 tsp ground cinnamon  

1/2 cup + 2 tbsp coconut milk  

2 tbsp coconut oil, melted 

2 tsp vanilla extract

Divide the eggs and beat egg whites until they form soft peaks. In another bowl, combine all dry ingredients and mix together. Mix wet ingredients in with the dry ingredients. Then, gently fold in the egg whites.  

Heat up the waffle iron using coconut oil to coat it. Fill the iron with about 1/2 cup (or more) of the mixture and cook until lightly browned.  

Top with sliced bananas, raspberries, mangos, strawberries, blueberries, or almond butter. The sugar-free possibilities are endless! Or for a little refined-sugar free sweetness, you can add a little bit of raw honey or pure maple syrup and ENJOY!!
