Honestly, I love chocolate. And I love cookies. I used to eat chocolate chip cookie dough like it was my job 😁 But, that’s not really an option anymore. (Plus it’s not really a good idea for anyone.) So, being the determined baker I am, I tried and tried until I found a way to make the most chocolatey, delicious, perfectly melt-in-your-mouth cookies without any refined sugar or grain or dairy. And guys, THEY’RE SO GOOD! So here’s the recipe:
1 egg
1 cup all-natural almond butter
1/2 cup unsweetened cocoa powder
1/2 cup all-natural applesauce
1/4 cup coconut milk
1 tsp stevia/honey (optional)
1 tsp baking soda
1 tsp salt
2 tsp vanilla extract
1/4 cup coconut flour
1/2 bar 100% dark chocolate, chopped (or we found Lilly’s chocolate chips the other day that are sweetened with stevia!)
Bake at 350 for 9-10 minutes.
The dough will be a little runnier than normal cookie dough, but they’ll turn out perfect I promise! And they’re good for you, so you don’t have to feel bad about eating 10. Okay, actually you probably still shouldn’t eat ten, but they really are the perfect “treat.”
